Garlic And Herb Chicken Meal Prep

Yummy buttery garlic and herb chicken thighs and drumsticks with sweet potatoes and long stem broccoli. Either eat at lunch or dinner,



Garlic and Herb Chicken

  • 2 Boneless Chicken Thighs
  • 2 Chicken Drumsticks
  • 2 Garlic Cloves (finely chopped)
  • 2 tbsp Butter
  • 1 tbsp Italian Seasoning (see notes)
  • Salt and Black Pepper (to taste)


  • 1 tsp Extra-Virgin Olive Oil
  • 1 Large Sweet Potato
  • Long-Stem Broccoli
  • 1 tbp Mixed Herbs


Roasted Sweet Potato Cubes

  • Add the peeled and cubed sweet potatoes to the mixing bowl, and add the extra virgin olive oil, salt (1/2 tsp), black pepper (1/2) and mixed herbs, stir to combine.
  • Place on a large baking tray and non-stick baking sheet. Add to the pre-heated oven 210c | 410f for 20-25 minutes.

Long Stem Broccoli

  • Either add the long stem broccoli to the same baking tray, with the sweet potatoes, and cook for 10-15 minutes, or add them to boiled water to cook in the background.

Garlic and Herb Chicken

  1. Pre-heat your griddle pan or frying pan on medium-high heat. Meanwhile,  season your chicken with salt and black pepper.
  2. Reduce the heat to medium and melt butter in your pan. Add the garlic and Italian seasoning and stir until fragrant.
  3. Add the chicken to the pan and cook each side for 5-6 minutes each side.
  4. Combine all ingredients in your meal prep container.


  • For meal prep purposes, refrigerate up to four days.
  • I used Italian seasoning which is the same as using a 1/2 tsp each of Oregano, Thyme and Basil.
