Sweet and Sour Tofu Noodles

The sweet and sour tofu stir fry was a recent meal prep which is quick, simple, and conveniently made in one-pot.

I have tried to prep sweet and sour chicken in the past, but I did not enjoy it when the chicken is not deep fried and instead prefer to eat it on the weekend instead.

Using tofu as a substitute is not only a great alternative, if you are vegetarian or vegan, but it also tastes amazing. This recipe shows how you can make this in one-pot.

Ingredients

  • 400g Organic Tofu (drained, pressed and cut into cubes)
  • 1 Onion (cut into chunks)
  • 1 Red Chilli
  • 1 tbsp Garlic and Ginger Paste
  • 300g Straight To Wok Noodles
  • 1 Carrot
  • 100g Baby Sweetcorn
  • 100g  Sugar-Snap Peas
  • 2 tbsp Tomato Ketchup / Low-Carb Ketchup
  • 1 tbsp Soy Sauce
  • 1 tsp Malt Vinegar
  • Salt and Black Pepper (to taste)
  • 1 Green Onion
  • Sesame Seeds (garnish)
  • Extra Virgin Olive Oil

Instructions

  1. Add olive oil to a large saucepan.
  2. Add tofu and fry for 5-8 minutes, until they are golden brown on all sides. Temporarily add to separate plate and paper towel.
  3. Add the onion, garlic and ginger paste and red chilli. Fry for 5 minutes. Add the carrot, baby sweetcorn and sugar-snap peas, and fry for another 3 minutes.
  4. Add the tomato ketchup, soy sauce and malt vinegar.
  5. Add the straight to wok noodles and cook for another 5 minutes.
  6. Add to meal prep containers and garnish with sesame seeds and green onion.
