Here is a fun and healthy(ish) turkey taco stuffed peppers recipe which is a great way to reduce carbs and keep yourself feeling full.
Usually, turkey mince recipes can end up being too dry or bland, but by using taco seasoning, tomatoes, onions and garlic, it is full of flavour and is very satisfying.
Not to mention, by adding cheese, cilantro and jalapeño peppers takes it to another level. These are great to meal prep because it takes minutes to reheat in the microwave, and they keep well in the fridge for up to 3-4 days.

How to make turkey taco stuffed peppers?
1) Main ingredients
- Ground Turkey Mince: I use 7% fat which is just right for this recipe.
- Taco Seasoning: See here to make your own, or you could use a store-bought sachet.
- Tomatoes: Either use freshly chopped tomatoes or use one can.
- Bell Peppers: Use any type of bell pepper you prefer. This is a great way to buy a multipack and prevent food wastage.
- Cheese: Use any type of cheese you prefer. In this recipe photo, I used red Leicester cheese.
- Jalapeño: For the toppings, this gives it an extra kick.
You could also add rice or quinoa, and combine that with the turkey mince but I did not do that for this recipe.
Heat the oven 400°F/200°C and bake the bell peppers for 15 to 20 minutes.
Prep the turkey mince by adding olive oil, onions, and garlic to a large saucepan.
Add the taco seasoning, mine was homemade.
Stir to combine and cook the turkey mince.
Add the tomatoes and chopped cilantro. Cover on low-medium heat for 10 minutes. You can add water or chicken broth if you want but the tomato sauce will be good enough.
Remove bell peppers from the oven but keep them in the same baking tray. Add the cooked turkey mince to each bell pepper. Top up with shredded cheese and jalapenos. Cover in foil, add the baking tray back into the oven and continue to cook for 20-25 minutes.
How to store and reheat turkey taco stuffed peppers?
In order to meal prep these turkey taco stuffed peppers, simply store them in the fridge for up to 3-4 days, and use an air-tight meal prep container. Ensure the ingredients are fresh if you are planning to prep it for the week-ahead.
To freeze these turkey taco stuffed peppers, it will keep well and you can store it in the freezer for up to 3 months. However, if you are planning to batch cook these and freeze them, make it without the cheese and use air-tight freezer bags.
Healthy Taco Stuffed Peppers (Low-Carb)
- 500 g Ground Turkey Mince 7% fat.
- 1 Onion finely chopped.
- 2 Garlic Cloves minced.
- 1 tbsp Taco Seasoning, see notes for DIY recipe.
- 400 g Chopped Tomatoes from can.
- 6 Bell Peppers deseed.
- Chopped Cilantro
- 80 g Cheddar Cheese grated.
- Salt and Black Pepper to taste.
- 1 tsp Extra Virgin Olive Oil.
- Slice the bell peppers lengthways and remove everything inside. Add to a baking tray and heat oven to 400°F/200°C for 15 to 20 minutes.
- Prep the turkey mince by adding olive oil, onions, and garlic to a large saucepan on medium-high heat, and cook for 4-5 minutes.
- Add the turkey mince and taco seasoning, stir to combine.
- Add the tomatoes and chopped cilantro. Cover on low-medium heat for 10 minutes. You can add water or chicken broth if you want but the tomato sauce will be good enough.
- Remove bell peppers from the oven but keep them in the same baking tray.
- Add the cooked turkey mince to each bell pepper.
