Kofta Kebab Meal Prep

Kofta kebab and batata harra meal prep with tzatziki sauce. Enjoy this kebab-style salad during which is so satisfying. I made the batata harra using the air fryer and I mixed lean beef mince to make the kebabs.

Ingredients
  

Kofta Kebabs:

  • 300 g Lean Beef Mince 5% fat
  • 1/2 Onion finely chopped
  • 1 Garlic Clove finely chopped
  • 1/2 tsp Ground Coriander
  • 1/2 tsp Paprika Powder
  • 1/2 tsp Ground Turmeric
  • 1/2 tsp Ground Cumin
  • 1 Green Chilli optional
  • Salt and Black Pepper to taste
  • 1 tbsp Extra Virgin Olive Oil

Batata Harra:

  • 250 g Potatoes peeled and cubed
  • 1 Garlic Cloves finely chopped
  • 1/2 tsp Paprika
  • 1/2 tsp Turmeric
  • 1/4 tsp Ground Cumin
  • Salt and Black Pepper to taste
  • 1 Lemon juiced
  • 2 tbsp Extra Virgin Olive Oil
  • 1/2 Cup Fresh Coriander Leaves finely chopped

Serve with:

  • Leafy Green Salad
  • Tzatziki Sauce

Instructions
 

  • Wash and peel the potatoes. Chop the potatoes into cubes. Add the potato cubes to a mixing bowl, add olive oil and stir to combine.
  • Add the potatoes to the air fryer compartment. Set the heating to 180 C / 356 F and cook for 10 minutes.
  • After the potatoes are ready, pre-heat your frying pan and add olive oil on medium-high heat. Add the garlic and cook for 3 minutes. Then add the paprika, turmeric, ground cumin and lemon juice. Stir for another minute.
  • Add the potatoes to the frying pan, season with salt and black pepper and stir to combine all the ingredients. Add the coriander leaves and cook for another 5 minutes and serve.

Kofta Kebabs

  • If you are using bamboo skewers, ensure you allow them to soak in water for at least an hour before using the grill.
  • In a food processor, blend the onion, garlic and green chilli.
  • Combine all ingredients in a mixing bowl and stir to combine (it will be easier to use your hands).
  • Shape up the meat into balls first and then place it on the skewer. Now you can shape it into a kebab.
  • Pre-heat your griddle pan or frying pan on high heat.
  • Reduce heat to medium and add your kebabs. Cook each side for 5 to 7 minutes.

Notes

  • For meal prep purposes, refrigerate up to 4 days.
  • If you do not have an air fryer, you can bake the potatoes in the oven (for 25-30 minutes) or deep fry the potatoes.
  • If you want the kebab to taste more "juicy" buy a mince which is higher in fat. I use lean meat only for counting calories.
  • Prep and cook time reflects if you cook the kebab and batata harra simultaneously.
