Preheat the air fryer at 180°c / 350°f for about 10 minutes.
To your mixing bowl, whisk the eggs, paprika powder, cayenne pepper powder, garlic powder, onion powder, salt, and ground black pepper.
To another bowl, add the panko breadcrumbs.
Cut the chicken breasts into bite-sized chunks.
Dip the chicken piece into the egg mixture first, then dip into the breadcrumbs, and place in the air fryer basket.
In the air fryer basket, keep the chicken nuggets separated and in a single layer. You may need to cook these in two batches.
Spray with low-calorie cooking oil and cook for 12 - 15 minutes at 180°c / 350°f. Repeat the next batch until done.
